I love Parmesan! I love it on rice, in soups, over mashed potatoes and just about anywhere else I can. I also adore Parmesan cheese crisps. So, when I started making cheese, I was certain I would make Parmesan. I didn’t make it right away and it remains to be seen if this was a mistake or not.
I did end up making Parmesan in April of 2015 and here we are 10 months later and I just tried it. It is soft and flavorful and most resembles Swiss. My wife wasn’t impressed. but she rarely is by my cheese. So, I did what I do most often with my cheese, I re-waxed it and put it back into the Cheese Frig for a few more months. I’ll keep you posted.
