Caciocavallo
One of the really interesting shaped cheeses is Caciocavallo. It was shaped like this to be tied together and slung over your donkey or horse to take to market. Although my shapes were great, you get the idea. The flavor was amazing! I had some Garrotxa in the cave at the same time and the mold from it spread everywhere but ultimately didn’t hurt the cheese.
I am local to Northeast Colorado I have a small jersey herd I know how to make most cheeses that we use but there’s a couple things I haven’t figured out yet. I would like to be able to make pepper jack and Colby if you could help me make those two cheeses I can trade milk.
