This week we are all making Livarot (Leav-ah-row) a washed rind French cheese wrapped with a natural binder to keep the cheese from being a mushy mess. <\/p>\n\n\n\n<p>I purchased some Spruce strips from <a rel=\"noreferrer noopener\" href=\"https:\/\/cheesemaking.com\/products\/spruce-cambium-strips\" target=\"_blank\">NECM<\/a>. I was super excited as they showed up after just 3 days. One has a spruce strips around it to keep it together and enhance the flavor. Every few days it gets moldy enough for a quick wash of brine and B.linens. The orange is taking over the surface and the nooks and crannies are full of white mold. The ends are beginning to get squishy.
