{"id":229,"date":"2016-02-16T02:30:41","date_gmt":"2016-02-16T02:30:41","guid":{"rendered":"http:\/\/cheese.sunspotdesign.com\/cheese\/?p=229"},"modified":"2016-02-16T03:38:05","modified_gmt":"2016-02-16T03:38:05","slug":"feeling-abandoned","status":"publish","type":"post","link":"http:\/\/cheese.sunspotdesign.com\/cheese\/?p=229","title":{"rendered":"Feeling Abandoned?"},"content":{"rendered":"<p>As I look at my last posting, I realize that it has been sometime since I last posted. \u00a0Luckily, I have been making cheese, just\u00a0not talking about it. \u00a0I have also been eating some, I took a class and have been watching my Frig carefully.<\/p>\n<p>My plan is to begin to add in the entries for cheese I have made since October. So, if you have been following my progress you should check back soon to see all of those entries. \u00a0I am also going to post some updates on cheese that I have finally eaten.<\/p>\n<p>Let&#8217;s start with what I cut into today. I had the <a href=\"http:\/\/cheese.sunspotdesign.com\/cheese\/?p=61\">Gruyere from June 5th<\/a> of last year. It had<\/p>\n<figure id=\"attachment_232\" aria-describedby=\"caption-attachment-232\" style=\"width: 300px\" class=\"wp-caption alignleft\"><a href=\"http:\/\/cheese.sunspotdesign.com\/cheese\/wp-content\/uploads\/2016\/02\/20160215_085248_resized.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-232\" src=\"http:\/\/cheese.sunspotdesign.com\/cheese\/wp-content\/uploads\/2016\/02\/20160215_085248_resized-300x169.jpg\" alt=\"Gruyere\" width=\"300\" height=\"169\" srcset=\"http:\/\/cheese.sunspotdesign.com\/cheese\/wp-content\/uploads\/2016\/02\/20160215_085248_resized-300x169.jpg 300w, http:\/\/cheese.sunspotdesign.com\/cheese\/wp-content\/uploads\/2016\/02\/20160215_085248_resized-1024x576.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><figcaption id=\"caption-attachment-232\" class=\"wp-caption-text\">Gruyere<\/figcaption><\/figure>\n<p>been developing a little blue mold in the sealed bag, not a lot so I wasn&#8217;t worried. After cleaning it up, I cut a few pieces to try. \u00a0It was a bit dry like parmesan and tasted kinda like that too. \u00a0The outside edge also has a little bit of a blue taste. \u00a0Anyway, I like the way it tastes and the way it is aging, so I put it back into the same seal-a-meal back and sealed it up again.<\/p>\n<p>The other thing I opened was the <a href=\"http:\/\/cheese.sunspotdesign.com\/cheese\/?p=187\">Jarlsberg Remake<\/a>\u00a0from October 9th, 2015. \u00a0This was a 7<\/p>\n<figure id=\"attachment_231\" aria-describedby=\"caption-attachment-231\" style=\"width: 316px\" class=\"wp-caption alignright\"><a href=\"http:\/\/cheese.sunspotdesign.com\/cheese\/wp-content\/uploads\/2016\/02\/20160215_084123_resized.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-231\" src=\"http:\/\/cheese.sunspotdesign.com\/cheese\/wp-content\/uploads\/2016\/02\/20160215_084123_resized-300x169.jpg\" alt=\"4 month Jarlsberg\" width=\"316\" height=\"178\" srcset=\"http:\/\/cheese.sunspotdesign.com\/cheese\/wp-content\/uploads\/2016\/02\/20160215_084123_resized-300x169.jpg 300w, http:\/\/cheese.sunspotdesign.com\/cheese\/wp-content\/uploads\/2016\/02\/20160215_084123_resized-1024x576.jpg 1024w\" sizes=\"auto, (max-width: 316px) 100vw, 316px\" \/><\/a><figcaption id=\"caption-attachment-231\" class=\"wp-caption-text\">4 month Jarlsberg<\/figcaption><\/figure>\n<p>gallon batch of Jarlsberg, two\u00a0&#8211; 3.5\u00a0gallon batches combined into three wheels. \u00a0I believe that the wheels turned out to be 3.5 lbs., 2.5 lbs. and 1 pound wheel. \u00a0The smaller one is what I cut open as it was in a seal-a-meal bag and easiest to get open. \u00a0This wheel has always had a nice springy feel to it. \u00a0Once I opened it I\u00a0noticed it was a little damp and that moisture has keep the cheese soft and creamy. \u00a0It&#8217;s consistency was nice in your mouth without an overpowering flavor. It has only been aging for 4 months and that&#8217;s the way it tasted.
