I love\u00a0it on rice, in soups, over mashed potatoes and just about anywhere else I can. \u00a0I also adore Parmesan cheese crisps. So, when I started making cheese, I was certain I would make Parmesan. \u00a0I didn&#8217;t make it right away and it remains to be seen if this was a mistake or not.<\/p>\n<p>I did end up making Parmesan in April of 2015 and here we are 10 months later and I just tried it. \u00a0It is soft and flavorful and most resembles \u00a0Swiss. \u00a0My wife wasn&#8217;t impressed. but she rarely is by my cheese. So, I did what I do most often with my cheese, I re-waxed it and put it back into the Cheese Frig for a few more months.
