I’m not really a fan of Camembert, but my wife says she is. I guess I will find out. On Sunday August 23rd, I made a 2 gallon batch.

I don’t have a Camembert mold, so I just used baskets and they worked well enough. They air dried in the basement for a few days, before being ready for the frig. (top picture)

Another week has gone by and I decided to find a sushi mat to put them on as the rind begins to grow in. Very exciting to see all of the growth.
